2: Simple & Quick Mediterranean Dinner for Two @ Home

I always try to keep my cooking during the week as simple as possible. I hate spending too much time in the kitchen after coming home from work. This recipe was a no-brainer as I had leftover turkey meatballs and all I needed was the pita pockets which I picked up on the way back home.

I first made the dill rice. For this heat olive oil in a pan and add 2 cloves of finely chopped garlic, after the garlic is lightly browned, add 2 cups of rice and 2-3 table spoons of dill weed. Stir fry the rice for 3-4 minutes and add salt as needed. (Garlic powder can be used instead of garlic cloves).

I made my own version of the tzatziki sauce. Beat a cup of yogurt with 2-3 table spoons of water. Add a table spoon of finely grated cucumber, garlic powder, salt and finely chopped parsley.

For the pitas, microwave the pita pockets for 20 secs. Place a layer of lettuce or baby spinach (I used iceberg lettuce and romaine), thin slices of cucumber, then the turkey meatballs cut into medium pieces. Add 2-3 spoons of the tzatziki sauce.

A yum meal for two in less than 15 mins and less than $10!
