90: Southern Breakfast Bake

 

A real easy and quick breakfast recipe especially for large groups. It is basically a grand slam breakfast all combined into one dish.

Recipes makes for two people (double quantities for more)
2 slices bread, crusts removed
2 Turkey sausages, cut into thick slices (use any other meat, I just used what I had at home)
1/4 cup sliced green onion (spring onions)
1/2 onion, finely chopped
1/2 cup diced tomato (add other veggies, I added Broccoli, green bell peppers are a good option too)
1/2 cup Cheddar Cheese
salt and pepper
4 large eggs
1/2 cup milk
1/4 tsp. Cajun or Creole seasoning
1/4 tsp. paprika, optional
2 tsp. garlic chilli sauce

Cut the bread into small pieces and spread in bottom of a lightly buttered cake pan/ bread pan. Heat oil in a pan and saute onions, veggies and sausage slices. Add a little salt, pepper, paprika, and half the creole seasoning. Saute until onions and veggies are slightly browned (3-4 mins.). Spread this mix over the bread pieces over the bread. Sprinkle with green onion, tomato, then the cheese. Sprinkle the garlic chilli sauce over this. Beat the eggs and the milk with salt and pepper and the remaining creole seasoning. Pour this mix over the sauteed vegetables. Refrigerate overnight or bake immediately. If refrigerating overnight, take casserole out of refrigerator about 1/2 hour before baking. Bake at 350 F for 40 to 45 minutes, until set in middle.

27: Breakfast Pizza


Late in posting this...but thought I'll share this with y'all. An easy and great idea for breakfast. I made two kinds of breakfast pizza.

One with bread and vegetables. Pre-heat oven to 375 F. On a slice of bread, break an egg and place chopped tomatoes, spinach, corn and mozzarella cheese (You can use vegetables or meat of your choice) and bake for 10 mins.

The second pizza I made was with crescent dough. Spread the dough and coat with a Tbsp of a beaten egg. Place toppings and cheese and bake for 18-20 mins.

Whats better than a yum pizza and homemade mimosas for brunch...

13: Breakfast Quiche Muffins


Quiche is something I tried making for the first time and I was truly surprised at how easy it was. You can make it with different bases...hash browns, pastry sheets... I used Pillsbury garlic butter crescent rolls.

Beat 2 eggs, 1/4 cup half and half, 4 table spoons of cheese (I used mozzarella, cheddar, fontina cheese can also be used) salt to taste and pepper.

You can use your choice of veggies and meat, I used sauteed onions, green peppers, ground turkey and spinach. Add the veggies and meat to the egg and mix well. Now grease a muffin pan and divide the Pillsbury dough into 4 equal portions. Spread each portion of the dough to coat the muffin cup. Pour the egg mix in the each of the muffin cups. Do not over fill the muffin cups as it will over flow when heated. Pre-heat the oven to 350 degrees, place the muffin pan in the oven and bake for 15 minutes. Easy-peezy breakfast quiche muffins are ready. This is surely an ideal option when you have guests home for brunch...
