44: Stuffed Chicken with Roasted Pepper and Tomato Sauce


This is my second attempt at making stuffed chicken....the first time I baked it in the oven along with a turkey and it turned out a tad too dry. This time around...I am completely improvising based on what I have at home and following no real recipe. But I must say the flavors have worked out perfectly well and the stuffed chicken was quite a success.

Stuffed Chicken Recipe:

3 boneless chicken breasts

2 Tbsp Cayenne pepper
1 lime
1 cup cottage cheese
1/2 cup chopped parsley
1 garlic clove
salt to taste


Cut each of the chicken breasts along the long cross section, so that you have 6 flat pieces of chicken breast. Place the pieces on parchment paper and flatten using a mallet. Be careful and make sure that you want the pieces just flat and not completely mushy. Now marinate the chicken with salt, cayenne pepper and lime juice for 30 minutes. Mix the cottage cheese with the chopped parsley. On each slice of chicken breast, place 2 spoons of the cheese/ parsley mix and gently roll it and seal the open ends with a toothpick. Heat some olive oil in a deep non-stick pan and place the garlic in the oil. Once the oil is hot, lower the heat to medium and place the stuffed chicken pieces in the oil. Fry until the pieces are browned on both sides.  Remove and place on a  plate. Once cooled, make sure to remove all the toothpicks from the chicken.

Roasted Pepper and Tomato Sauce Recipe:

2 bell peppers ( I used one green and one red pepper), chopped into large pieces
1 medium onion, diced
3 Roma tomatoes
3 green chillies
3 garlic cloves
2 Tbsp vinegar
1 Tbsp curry powder
Salt to taste

Pre-heat oven to 450 F. Cut all the vegetables into large pieces and drizzle olive oil and salt and roast in the oven for 30 minutes or until the vegetables are soft. Once the vegetables cool down, place in a blender and puree the mix. Heat olive oil in a pan and add the puree. Add the vinegar and salt to taste. Let the sauce come to boil.



Place the stuffed chicken pieces in the sauce and let it simmer for 2-3 minutes. Loved how all the flavors come together in this dish, from the cottage cheese, chicken to the pepper and tomato sauce....totally flavorful!
