A real easy and quick breakfast recipe especially for large groups. It is basically a grand slam breakfast all combined into one dish.
Recipes makes for two people (double quantities for more)
2 slices bread, crusts removed
2 Turkey sausages, cut into thick slices (use any other meat, I just used what I had at home)
1/4 cup sliced green onion (spring onions)
1/2 onion, finely chopped
1/2 cup diced tomato (add other veggies, I added Broccoli, green bell peppers are a good option too)
1/2 cup Cheddar Cheese
salt and pepper
4 large eggs
1/2 cup milk
1/4 tsp. Cajun or Creole seasoning
1/4 tsp. paprika, optional
2 tsp. garlic chilli sauce
Cut the bread into small pieces and spread in bottom of a lightly buttered cake pan/ bread pan. Heat oil in a pan and saute onions, veggies and sausage slices. Add a little salt, pepper, paprika, and half the creole seasoning. Saute until onions and veggies are slightly browned (3-4 mins.). Spread this mix over the bread pieces over the bread. Sprinkle with green onion, tomato, then the cheese. Sprinkle the garlic chilli sauce over this. Beat the eggs and the milk with salt and pepper and the remaining creole seasoning. Pour this mix over the sauteed vegetables. Refrigerate overnight or bake immediately. If refrigerating overnight, take casserole out of refrigerator about 1/2 hour before baking. Bake at 350 F for 40 to 45 minutes, until set in middle.
