41: Lamb Kebabs and Saffron Rice
A really easy and quick recipe for lunch or dinner. You will need:
1 lb ground lamb
2 Tbsp salt
1 tsp turmeric powder
2 Tbsp cayenne powder
1/2 cup finely chopped shallots
1 Tbsp minced garlic
1 Tbsp minced ginger
freshly squeezed juice from 2 limes
Mix all the ingredients except juice from 1 lime and refrigerate for 30 minutes. Pre-heat the oven to 350 F. Make small balls of the ground lamb mix and place in a baking tray. Place the tray in the oven and cook for 25 mins. I also simultaneously placed the diced potatoes and carrots. Mix the diced potatoes and carrots with a Tbsp of Olive oil and 2 Tbsp chopped parsley, 1 Tbsp salt. Place this mix in the same tray as the meat balls and bake for 25 mins.
Remove the meat balls from the oven and place them on skewers and grill for 2-3 mins with a drizzle of olive oil. Squeeze the remaining lime juice over the skewers.
For the saffron rice, I used a microwavable rice cooker. Place the cleaned Jasmine rice in the cooker, add chicken broth instead of regular water. Add a pinch of saffron, 2 Tbsp salt, 2 Tbsp raisins, 1 bay leaf and cook for 15 mins in the microwave.
Serve the lamb kebobs with the saffron rice and roasted potatoes and carrots.
